Since I started this whole Domestic thing a few months ago, I can now say, oh, yes, this was my Second attempt at making a galette. (The first I HATED.) This one was much better, and much easier, and MUCH tastier. That’s because Dorie Greenspan is a genius…and that’s about all I have to say about that.
It has been at least 2 weeks since I made this galette. Honestly, I am not entirely sure how to SAY galette (is it GALETTE, GAL-AY, JALETTE, JAL-AY? Dunno.) But I do know it’s a pie. A drippy pie without a pie pan. And it’s good. But then again, it uses Dorie’s Good for Almost Anything Pie Crust, which I now keep on hand in my freezer just for moments when Just About Anything occurs. (For the record, it does not vacuum or clean the toilet.)
I filled the pie with peaches from the back yard, blueberries from Bob Pond Farm, Cherries and Plums from the Farmer’s Market, and Black & Red Raspberries that Jon picked while working. So, very fresh. And the custard? Well, that was like the icing on the cake. I mean, custard on the pie, erm, Galette. We served it at the little get-together we had during the weekend that my in-laws visited, and it was gone in about 2.2 seconds. Served up with vanilla ice cream, it didn’t stand a chance. That’s why so few pictures, people. The natives were acting as if starved, and me snapping pictures was not overly tolerated. Forget about seeing it in a serving dish…you are lucky to see it at all.
