Oh, it’s too easy.
You’re gonna get fat from these bad boys.
They are essentially a preacher cookie, but hello…they are made with a LOT of pretzels. Sweet. Salty. Goodness. I think you’ll find them irresistible.
They lasted about, oh, 7 and a half minutes here.
Sweet & Salty No Bake Nutella & Pretzel Cookies
- 2 cups vanilla sugar (regular is okay, too)
- 1 stick butter
- 1 1/2 Tbsp. Cocoa Powder
- 1/2 cup milk
- 2 cups pretzels, crushed
- 1 cups Instant Oats
- 1/4 cupPeanut Butter
- 1/4 cup Nutella
- 1 teaspoon Vanilla
Bring sugar, butter, cocoa, and milk to a rolling boil for 1 minute, or use a candy thermometer and reach 205-210. (The thermometer works best for me. If you do use the boiling time, be sure to wait until the boil is ROLLING before you start timing the minute.)
When the mixture is ready, remove from heat and add remaining ingredients, stirring quickly before the cookies set up. Drop by tablespoon-fulls onto parchment or wax paper and allow to cool.
As you can see, Seven was my sous chef on this little endeavor. He helps more and more as he gets older, and he’s actually very adept. he’s great at measuring, stirring, microwaving. It helps him with his counting, reasoning, and coordination – and while I don’t claim to be a great mom, I AM using what I know, and sharing it with him. It seems to be working.
I didn’t realize until the other day that he can do simple addition and subtraction. How did I not know this? Are all 4 year olds doing this? I mean, he can’t read. He knows all of his letters and numbers, and he does recognize his name and other random words, but definitely not reading. I have him in Pre-school…hopefully they are more qualified to teach him than I am. But the math? Where did THAT come from? Normal or no? (I’m talking basic, like: “Seven, if you have 6 flowers and you subtract 4, how many do you have?” kind of thing.) Anyone?

I love no-bake cookies so much and can only imagine that they’d be 10x better with nutella and pretzels!
I think that’s normal math for his age… my now-4yo was saying, when he was 2.5, “if I have three and one, it is four, but it’s also four if I have two and two”. Incidentally, he also loves to help in the kitchen and is good at microwaving, chopping (with a plastic knife, things like zucchini, carrots, mushrooms), stirring… and FETCHING! omg that is my favourite. He is so happy to scamper back and forth from the pantry, bringing me things. Which is great because he gets to practice reading and I get to be more efficient by not constantly making circles around my very inefficiently designed (not by me, for sure!) kitchen.

YOU ARE A GREAT MOM. Not a Good Mom, A GREAT MOM! These cookies are making their way to Nutella-Loving-Matt’s dorm room soon. Thanks. All kids are different…some learn early and others learn later and from what I can tell, it sort of tapers off (except for true genius people) by the time they are in the third grade and everyone seems to be more or less at the same level and ready to advance accordingly, i.e. some will always be smarter than others but that surge of learning in the early years tapers off and people tend to learn or not learn at the same rate after that…does that make sense? Alex was doing math (could solve simple algebraic equations at 3 and taught himself to read at 4 after I explained all the letters had sounds and what sounds they made and the next week he was reading Hardy Boys books. Matt didn’t want to read until he was 8 (seriously) and yet he was doing great at math and could solve simple algebraic problems well before then. By the time they were 9, they were pretty even on the advancement of learning and proceeded accordingly. I think the biggest thing is encouragement and recognizing where each one is at what time and be supportive in helping them advance to the next level…you are doing all that and he is embracing it. He will be one of those smart kids his whole life! You are a great mom, Susan, never forget for an instant. xo

Two cups of crushed pretzels. Not pulverized, crushed. Hope that helps?
Yes, that helps. Because 2 cups of pretzels that are crushed after measuring, only ends up being 1 cup of crushed pretzels. I crushed first and then measured and it seems like a good consistency.
Okay, I just ran to my pantry to check and then hopped around squealing with joy because I HAVE all the ingredients for these.
AND it’s 101 degrees outside and NOT baking but still having cookies sounds FANTASTIC right now.
