Queso Steak Dip

The best thing about Mexican restaurants?

The Queso Dip.  Hands down.  Now, my husband might argue it’s the margaritas, but he’d be wrong.

It’s the Queso.

Creamy, spicy, flavorful cheese.  I honestly have no clue what kind of cheese it is…but it’s fantastic and even better paired with salty tortilla chips.

When we went to Charlotte a few weeks ago, we ate at a restaurant that offered a Queso Steak Dip, so, being intrigued, and starved from traveling, we HAD to try it.

Good gracious.

We practically fought over the bowl from which to lick the remaining drops of sunshine.  I knew, then and there, that this was one recipe in need of recreating.

Recreate it I did.  It’s possibly better than the original…and perfect for a party.  Especially a tailgate, or – how about the National Championship game this Monday?  Who are YOU rooting for?  Do you care?  Regardless…if there is a man in your house, go ahead and invite up a few more friends for the sheer reason that you’ll be able to gorge your face with this dip while everyone else is watching the game.

Not kidding.

If you want to start with a made-from-scratch chile con queso, here is how:

28-oz. can plum tomatoes, drained and chopped (I use fresh, finely chopped tomatoes)
2 4-oz. cans chopped green chiles, drained
1 c. whipping cream
16-oz. pkg. shredded Cheddar cheese
hot sauce, salt and pepper to taste

Combine tomatoes and chiles in a medium saucepan over low heat. Simmer for about 15 minutes. Stirring constantly, add cream and cheese; continue cooking until mixture thickens. Add hot sauce, salt and pepper to taste; serve warm. Makes 6 cups.

This is easy and tastes great!

Thanks for the recipe! I have been searching for something like this, and nothing ever seems quite right, so I’ll give this one a try. Restaurants here in CA don’t ever have queso (*sob*).

Couple of questions: One, I am not sure as to which “refrigerated Queso Cheese Sauce” you are referring. Which area would you find this? (deli, dairy, ??) And, which brand did you use or prefer? Second, what is “wet” minced garlic? Thanks!

At our stores, the Queso cheese sauce is in the refrigerated section of the store where they keep the chilled tortillas. No particular brand, at least, not something special. You can, however, use 2 cups of shredded mozzarella and about 1/2 cup of cream and a little extra seasoning if you can’t find it. Wet minced garlic you’ll typically find in the produce, near the whole garlic. It’s in a jar. You’ll love it!
